Beef Brisket
Beef Brisket
Thought to be one of the most difficult cuts of meat to produce: how to trim it, season it, and what temperature to cook it at. Everywhere you look there is a different method. My brisket is simple. Every ounce of fat is left in place. It is rubbed with salt and paprika and it’s smoked until it jiggles like a jello mold when you smack it. Our brisket is cut into thick pieces and we try to get a little bit of everything in each portion. That means a little bit of the point (fattier side) a bit of the flat (leaner more dry) and those delicious black ends!
